Recipe
Ingredients:

- 12 oz pasta (penne, rotini, or your favorite)
- 3½ cups chicken or vegetable broth
- 1 cup heavy cream (or half-and-half for a lighter option)
- 2 cups fresh spinach (you can sneak in more!)
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: grilled chicken, Italian sausage, or rotisserie chicken
Instructions:
- Sauté the garlic & tomatoes:In a large pot, heat the olive oil over medium heat. Add garlic and chopped sun-dried tomatoes. Sauté until fragrant (about 1–2 minutes).
- Add the pasta & broth:
Pour in the pasta and broth. Stir well and bring to a boil. - Simmer & cook the pasta:
Reduce heat to medium-low. Cover the pot and let it simmer for 10–12 minutes. Stir occasionally until the pasta is al dente. Make sure most of the liquid is absorbed. - Add the cream, spinach & cheese:
Stir in the heavy cream, fresh spinach, and Parmesan. Keep stirring until spinach wilts and sauce thickens (about 2–3 minutes). - Optional protein boost:
Add in your grilled chicken or sausage slices if using. Heat through. - Taste & serve:
Season with salt and pepper. Serve warm with extra Parmesan on top (because… always more cheese).
